Lentil Soup

Ingredients
  • 1 chopped onion
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 tbsp olive oil
Heat oil over medium heat, add vegetables. Cook about 10 min or until onions are translucent. Add:
  • 3 cloves garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
Cook for a couple more minutes. Add:
  • 1 can crushed/diced tomatoes
  • 6 cups water
  • 1 can chicken broth (can use water)
  • 2 cups dried lentils
  • 1 tsp salt
Bring to a boil. Reduce heat and simmer for at least an hour. Add salt and pepper to taste.

Serving Suggestion: Corn bread

I really like this soup. Grace and Abi both ate it well, Scout doesn't like tomatoes or cooked carrots so she picked through hers but liked the rest of the soup.
