Easy Pot Pie

Amy your pot pie recipe reminded me I have a really good fast one, so here it is.





Ingredients
~2 packages of frozen pie crusts ~3 cups or more of any leftover or canned meat (see below)
~16 oz bag of mixed vegetables (see below)
~1 small onion chopped
~2 cans cream of chicken/potato/broccoli your choice
~1 1/2 c sour cream

I have a recipe for the crust but it adds a bit of time onto the prep so you can just buy a frozen pie crust, one of the two packs because you need a top. I'll put my crust recipe on here separately, it's the best crust ever. If you want to try it, it's easy and kids love making their own, you just have to save some of your pie pans from the frozen pot pie you buy.(see below for which ones)

Buy the double packages so you have 4 pie crusts or two pie crust with the tops. So this makes 2 pot pies with tops you can eat both, my family will, or if you only have 2-3 people you can make the other and freeze it for later)

Meat- use beef, chicken, or pork. The church canned meat is awesome in this. I am not much of a meat person so I only put 3 cups but add as much as you want.

Veggies- Whatever kind your family likes. I add a can of green beans too. Again it's pretty much any veggies you have, can also be leftover cooked veggies.

Directions
Mix all the filling ingredients together and pour equally into the two crusts. Bake 15 min on the bottom rack at 400 degrees. The bake on middle rack for 30-40 minutes at 350 degrees until the top is golden brown.



Crust
8 oz cream cheese
1 pound butter
4 1/2 c flour

Blend with a pastry brush or using two knifes to cut it all together until it's crumbly. In an 11x15 pan put half mixture in the bottom and press. Put all of filling in and roll out the other half of dough for a top. You may need to add just a little water to it so it sticks together better. Cook the same as above but the second half will take 35-45 min to cook.

Mexican-Style Pasta Bake

Salsa, cumin, and cilantro give this one-dish meal south-of-the-border flair. You can make it in individual servings or in a 3-quart baking dish, depending on the size of your dinner crowd.

Prep: 35 minutes
Bake: 15 minutes

Ingredients

12 ounces dried bow tie pasta (about 5 cups)
1/2 cup chopped onion
1/2 cup chopped red sweet pepper
3 tablespoons butter
1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon dried cilantro, crushed
1/2 teaspoon ground cumin
3 cups milk
6 ounces Colby cheese, cubed
1-1/2 cups shredded Monterey Jack cheese (6 oz.)
1 cup bottled salsa
2/3 cup halved pitted green and/or ripe olives
Chili powder

Directions

1. Preheat oven to 350 degree F. Butter six 12- to 16-ounce individual casserole dishes (or one 3-quart baking dish); set aside. In a 4-quart Dutch oven cook pasta according to package directions. Drain; return to pan. In a large saucepan cook onion and sweet pepper in butter over medium heat about 5 minutes or until tender. Stir in flour, salt, cilantro, and cumin. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Reduce heat to low. Stir in Colby cheese and 1 cup of the Monterey Jack cheese; stir until cheese is melted. Pour over drained pasta; stir to combine.
2. Layer half of the pasta mixture, all of the salsa, and the remaining pasta mixture in the prepared casseroles. Sprinkle with remaining 1/2 cup Monterey Jack cheese and olives. Sprinkle lightly with chili powder. Bake, uncovered, 15 to 20 minutes or until bubbly around edges and heated through. (If using large casserole, bake in a 400 degree F oven about 20 minutes.) Let stand 5 minutes before serving. Makes 6 servings.

Baked Cavatelli

This sausage and pasta dish is hearty, filling, and easy. If you want to sneak in some vegetables, just place fresh spinach in the sieve you'll use to drain your pasta -- the hot water will wilt it.

Prep: 25 minutes
Bake: 30 minutes

Ingredients

7 ounces dried cavatelli or wagon wheel macaroni
12 ounces uncooked Italian sausage links, sliced 1/2 inch thick, or lean ground beef
3/4 cup chopped onion (1 medium)
2 cloves garlic, minced
1 26-ounce jar pasta sauce
1 cup shredded mozzarella cheese (4 ounces)
1/4 teaspoon black pepper

Directions

1. Cook pasta according to package directions. Drain; set aside.
2. In a large skillet cook the sausage, onion, and garlic until sausage is brown; remove from skillet. Drain.
3. In a large bowl stir together pasta sauce, 3/4 cup of the mozzarella cheese, and the pepper. Add the cooked pasta and the drained sausage mixture. Stir gently to combine. Spoon the mixture into a 2-quart casserole.
4. Bake, covered, in a 375� oven for 25 to 30 minutes or until nearly heated through. Uncover; sprinkle with the remaining 1/4 cup mozzarella cheese. Bake about 5 minutes more or until cheese is melted. Makes 5 to 6 servings.

Bean-and-Beef Enchilada Casserole

For enchilada flavor -- without all the frying, filling, and rolling -- try this mouthwatering dish. Cut fat by making it with ground turkey, reduced fat cheese, and fat-free sour cream.

Prep: 25 minutes
Chill: up to 24 hours
Bake: 40 minutes

Ingredients

1/2 pound lean ground beef
1/2 cup chopped onion
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 15-ounce can pinto beans, drained and rinsed
1 4-ounce can diced green chili peppers
1 8-ounce carton dairy sour cream or light dairy sour cream
2 tablespoons all-purpose flour
1/4 teaspoon garlic powder
8 6-inch corn tortillas
1 10-ounce can enchilada sauce or one 101/2-ounce can tomato puree
1 cup shredded cheddar cheese (4 ounces)

Directions

1. In a large skillet cook the ground beef, onion, chili powder, and cumin until onion is tender and meat is no longer pink; drain. Stir pinto beans and undrained chili peppers into meat mixture; set aside.
2. In a small mixing bowl stir together sour cream, flour, and garlic powder until combined; set aside.
3. Place half of the tortillas in the bottom of a lightly greased 2-quart rectangular baking dish, cutting to fit if necessary. Top with half of the meat mixture, half of the sour cream mixture, and half of the enchilada sauce. Repeat layers. Cover dish with plastic wrap; chill in refrigerator for up to 24 hours.
4. To serve: Preheat oven to 350F. Remove plastic wrap; cover dish with foil. Bake in preheated oven for 35 to 40 minutes or until bubbly. Uncover; sprinkle with cheese and bake 5 minutes more. Makes 6 to 8 servings.

Chicken-Leek Casserole

A delicate cream-and-wine sauce makes this delightful dish sing. Make it ahead for a dinner party-worth dish that's quick and easy.

Prep: 30 minutes
Chill: 4 to 24 hours
Bake: 20 minutes

Ingredients

8 to 10 leeks (about 2 pounds)
1 tablespoon olive oil
12 ounces skinless boneless chicken breast, cut into thin strips
1/2 cup dry white wine
1 cup whipping cream
1/4 to 1/2 teaspoon salt
Dash ground nutmeg
1 baby leek, trimmed, halved lengthwise, and rinsed (optional)
1/4 cup grated Parmesan cheese (1 ounce)
1/4 cup soft bread crumbs

Directions

1. Trim and discard root ends from the 8 to 10 leeks; remove several inches from the tops and any tough outer leaves. Halve leeks lengthwise. Clean trimmed leeks thoroughly under cold running water to remove any sand. Bias-slice leeks into 1/4-inch-thick slices. (You should have 3 cups sliced leeks.)
2. In a large skillet, heat oil over medium heat. Add sliced leeks. Cook and stir for 2 to 3 minutes or just until tender. Remove leeks from skillet; set aside.
3. In the same skillet, cook and stir chicken strips for 3 to 5 minutes or until no longer pink. Remove skillet from heat. Add wine. Return skillet to heat. Bring mixture just to boiling; reduce heat. Cook, uncovered, for 4 to 5 minutes or until most of the liquid has evaporated, stirring occasionally. Add whipping cream, salt, and nutmeg. Return to boiling. Cook and stir about 3 minutes more or until slightly thickened. Add sliced leeks to chicken mixture. Pour into a lightly greased 1-quart au gratin dish or casserole. Cover and refrigerate for at least 4 hours or up to 24 hours.
4. Preheat oven to 400F. Uncover casserole. If desired, add baby leek halves. Sprinkle cheese and bread crumbs over. Bake, uncovered, for 20 to 25 minutes or until topping is golden and leek mixture is heated through. Makes 6 servings.
5. To tote to a potluck: Cover casserole tightly with foil. Place in an insulated carrier.

Upside-Down Pizza Casserole

This four-ingredient casserole takes just 35 minutes to make, from start to finish. Ground beef makes it nice and hearty, while store-bought biscuits make a quick and easy topper.

Prep: 20 minutes
Bake: 15 minutes

Ingredients

1-1/2 pounds lean ground beef
1 15-ounce can Italian-style tomato sauce
1-1/2 cups shredded mozzarella cheese (6 ounces)
1 10-ounce package refrigerated biscuits (10 biscuits)

Directions

1. Preheat oven to 400 degrees F. In a large skillet cook beef until no longer pink, stirring frequently. Drain off fat. Stir in tomato sauce; heat through. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mixture with cheese.
2. Flatten each biscuit with your hands; arrange the biscuits on top of the cheese. Bake in the preheated oven about 15 minutes or until biscuits are golden. Makes 5 servings.

Nacho Turkey Casserole

If you like nachos with all the trimmings, you'll love this dish. Not a fan of turkey? Try it with ground chicken or beef instead.

Prep: 15 minutes
Bake: 30 minutes

Ingredients

5 cups slightly crushed tortilla chips
4 cups cubed cooked turkey or chicken
2 16-ounce jars salsa
1 10-ounce package frozen whole kernel corn
1/2 cup dairy sour cream
2 tablespoons all-purpose flour
1 cup (4 oz.) shredded Monterey Jack cheese with jalapeƱo peppers or mozzarella cheese

Directions

1. Lightly grease a 3-quart rectangular baking dish. Place 3 cups of the tortilla chips in bottom of dish. In a large bowl combine turkey, salsa, corn, sour cream, and flour; spoon over tortilla chips.
2. Bake, uncovered, in a 350 degree F oven for 25 minutes. Sprinkle with the remaining 2 cups tortilla chips and the cheese. Bake, uncovered, for 5 to 10 minutes more or until heated through. Makes 8 servings.
To Tote: Cover tightly. Transport in an insulated carrier.
For 4 Servings: Prepare using method above, except assemble in a 2-quart square baking dish.
