BBQ Pork sandwiches the easy way

My Mom sent me a bunch of food storage a couple of years back. Among themany things i didn't know what to do with was canned pork chunks. These ones were canned by my mom at the LDS church store house.

One of our family's faves is BBQ pork on rolls.

1 can pork chunks

BBQ sauce of your choice.

Dump into a sauce pan and stir and heat to boiling. We dump it on Judy's rolls or sandwich bread in a pinch. i like mine with sliced cheese on it but I'm the only one.

It takes about 10 min. Serves 4

Chocolate gremlins

1 cup butterscotch chips (or peanut butter chips)
1 cup semisweet chocolate chips
2 cups Fiber One cereal or small pretzel sticks
48 M&M's

In the microwave, heat chips until melted and smooth (stir every 30 seconds, when it is almost all melted with a little clumps still, just stir it for a minute or put it in for only a few seconds, don't over cook or they will separate and the dried chocolate will crack and leave a white residue on the outside).

Gently stir in cereal or pretzel sticks until well coated. Drop mixture by teaspoonfuls onto waxed paper to form 24 gremlins. Press 2 M&M's onto each for the eyes. Refrigerate until set (don't store in fridge though, chocolate sweats in the fridge, so it's better to store in a cupboard).

Snakes on a stick

rod pretzels, one per snake
pkg refrigerated bread stick, one bread stick per snake
food coloring diluted in water
clean paintbrush

Wrap the dough around the pretzel rod in a spiral fashion until you reach the bottom of the pretzel rod. Press the ends to secure. Pain the snake with the food coloring and bake according to the package directions (helps if you let raise a little and cook it until golden brown). Let cool.

Crunchy Honey Mustard Chicken Fingers

Serves 4 hungry kids—double up for the rest of the family!

4 small, boneless skinless chicken breast halves
1/4 cup honey, warmed
1/4 cup Dijon mustard
1 cup corn flakes, crushed

Preheat oven to 425. Lightly grease a cookie sheet

In a small bowl, mix Dijon and warmed honey together till well mixed. Put crushed corn flakes in a separate bowl.

Slice chicken into 3/4 inch strips. Dip in honey mustard mix. Then roll in crushed corn flakes and put on cookie sheet.

Bake for 10 to 15 minutes or until done.

Graveyard

Prepared chocolate pudding
1 bag oreo cookies
1 bag gummie worms
8 ox cool whip

Mix equal ammounts of pudding and cool whip. Crush some oreos and mix with pudding. Put pudding in small bowl add gummy worms. Garnish with an oreo cookie as a headstone.

June 12 "Magic Day"

So today is national Magic Day. My kids love magic. Grace asked to go to the magic shop every day we were at Disneyland. We even bought her one of those small magic tricks sets, that I promptly put up so the peices wouldn't get lost and we have never gotten it back down for her. I think I will do that today.

Here is a recipe for Magic Slime if you want to try it out with your kids, it's super easy.

Magic Slime

What You Need

Bowl
Measuring cups
Water
Cornstarch
Food coloring (optional)
Resealable plastic bag

What You Do

Pour ⅓ cup of water into the bowl. If you want to add food coloring, drip five drops into the water.

Measure ¾ cup of cornstarch and begin sprinkling it into the water, a little at a time, until the measuring cup is empty.

Let the concoction stand for three or four minutes.

Now reach a hand (or both!) into the concoction and press the slime into a hard ball. Open your hand and watch and feel the ball return to its liquid state!

Store your slime in a resealable bag. (Never pour slime down the drain. If you need to discard it, put it in the trash.)

National day and trailmix recipe

Today is National Write to Your Father Day.

If you haven't had your kids make a card for their dad, today is a good day to do it. Also, if you are anything like me you haven't talked to your dad much lately. It's always good to be reminded to take the time to tell someone you love them.

I did hear a good idea for a father's day card. It said to do an invitation for dad on the outside it says "You are invited..." and the inside they write an activity like
On one evening walk with me.
To go camping in the back yard with me.
To go on a bike/hike with me.
To go to the park for a picnic with me.
or any other activity you kid would love to do just with dad. Then they can decorate it and put it in with some homemade snack and then wrap it.

Daddy Snack
Spread 4 cups bite-sized shredded wheat on a cookie sheet. Cover with 1/3 c melted butter and bake at 350 for 15 min. Add 1 1/2 c pretzel sticks, 1/2 c peanuts, and 1/2 c dried fruit. Mix well. Bag in individual portions for each child to give for a gift.

Activity
Make homemade wrapping paper. Cut a potato in half and write "bAb" on the flat part. (has to be mirror immage so it says dAd on the paper) Carve out the writing and use the potato as a stamp to decorate butcher paper.

Kid Friendly Recipes

Dowlin and I went to the kid's cooking class at Macey's tonight. I thought I would post the things we made. Keep in mind that these are definately for kids!

FROSTY

1/2 cup milk
4 tsp. nesquik powder (chocolate or strawberry)
2 cups vanilla ice cream

Add all ingredients to blender and mix well.

FROGS

2 miniature pretzel twists (per frog)
1 sandwich cookie, oreos work well (per frog)
vanilla frosting
2 M&Ms (per frog)

Attach pretzels to the bottom of the cookie with the frosting, these are the frogs feet so one on each side. Add a little frosting to the M&Ms, these will make the eyes.

WONTON CHIPS

30 wonton wrappers
2 tbsp. olive oil
1 clove garlic, minced
1/2 tsp. dried basil
1/4 cup parmesan or romano cheese
cooking spray

Heat oven to 350 degrees. Spray baking sheet with cooking spray. Cut wontons in half diagonally, arrange 1/3 of the triangles in a single layer on a baking sheet. In a small bowl, stir together oil, garlic and basil. Use a pastry brush to coat the wontons. Sprinkle with the cheese and bake for 8 minutes or until golden brown. Transfer to a cooling rack and repeat with the reamaining triangles. (These were not a huge hit with the kids, I thought they were ok. One mother suggested using cinamon sugar instead.)

APPLE CRISP

1/2 cup unsweetened apple sauce
1/8 tsp. apple pie spice
2 tbsp. frosted flakes cereal
1 tbsp. almonds, walnuts or pecans (optional)

Stir apple pie spice into the apple sauce in a microwave safe bowl; microwave for 15-30 seconds. Sprinkle cereal and nuts over the top and eat warm. (She suggested using the applesauce cups you buy and just having your kids put nuts and cereal on top. Dowlin loved this one!)

EASY S'MORES

graham crackers
chocolate hazelnut spread (Nutella)
marshmallow creme

Take 1 graham cracker and break in half. Spread chocolate spread on 1 half and marshmallow creme on the other. Place on a micorwave safe plate; microwave for 10 seconds.

*Add 10 seconds for each additional s'more that you cook at one time.

What to do....

So I know that we usually do recipes... But what do you guys do to keep the kids busy? My kids are wanting to make stuff, a lot of stuff. I'm looking for crafts and activities to do that involve less clutter or at least be outside. They are getting tired of bubbles and sidewalk chalk and I'm tired of trying to find places for paintings and pictures.
