1 medium onion, chopped
2 Tbsp. butter
2 Tbsp. all-purpose flour

1/2 of an 8-oz. pkg. reduced-fat cream cheese (Neufchâtel), cut up
1 cup Gruyére cheese, shredded (4 oz.)
1 Tbsp. snipped fresh chives or green onions
1-1/2 lb. Yukon gold or round red potatoes, cut in thin wedges
8 oz. sliced cooked Black Forest ham or country ham, coarsely chopped
1/2 cup coarsely crushed bagel chips
Thyme and/or Italian parsley leaves
Directions
1. Preheat oven to 350 degrees F. Grease a 2-quart rectangular baking dish; set aside.
2. For sauce, in medium saucepan cook onion in hot butter over medium heat 5 minutes or until tender; stirring occasionally. Stir in flour and mustard. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Reduce heat to low. Whisk in Neufchâtel cheese until smooth. Gradually add 1/2 cup of the Gruyére cheese until cheese is melted. Stir in chives.
3. In bowl combine potatoes, ham, and sauce; toss gently to combine. Transfer to prepared baking dish.
4. Bake, covered, 1 hour or until potatoes are tender. Uncover; stir carefully. Sprinkle with crushed chips and remaining cheese. Bake, uncovered, 10 to 15 minutes more or until cheese is melted. Let stand, 10 minutes before serving. Sprinkle with herbs. Serves 6.

Tuna Noodle Casserole
Tuna and noodles launched the casserole craze in the 1930s. This classic recipe features a crunchy potato chip topper, herb-flecked noodles, white albacore tuna, roasted red peppers, and Dijon mustard.

Bake: 30 minutes
Ingredients
3 cups medium noodles (4 oz.)
1 cup chopped celery
1/4 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
2 to 3 Tbsp. Dijon-style mustard
2-1/4 cups milk
1 12-oz. can chunk tuna, drained
1/2 cup bottled roasted red sweet peppers, chopped
Potato chips, optional
Directions
1. Preheat oven to 375 degrees F. In large saucepan cook noodles according to package directions. Drain; return noodles to pan.
2. For sauce, in medium saucepan cook celery and onion in hot butter until tender. Stir in flour, mustard, and 1/4 teaspoon black pepper. Add milk all at once; cook and stir until slightly thickened and bubbly, whisking to remove any lumps.
3. Gently fold sauce, tuna, and peppers into noodles. Transfer to lightly greased 1-1/2-quart baking dish. Top with chips. Bake, uncovered, 30 to 35 minutes or until heated through. Let stand 5 minutes. Serves 4.

1/2 cup sour cream
1 Tbsp. snipped fresh cilantro

Summer Succotash
Here is another one from our ward newsletter.
2 Cups frozen corn, defrosted
1 Can butter beans
1 small red pepper, chopped
1/2 Cup red onion, diced
1 Tbsp red wine vinegar
2 Tbsp fresh chopped parsley
2 Tbsp canola oil
Salt and pepper to taste
Mix veggies together, add vinegar and oil along with the salt and pepper to taste.

I got this off a friend's blog. I haven't tried it yet, but it sounds yummy!
Peanut Butter Cheese Ball
1 package (8 ounces) cream cheese, at room temperature
1 cup powdered sugar
3/4 cup creamy or chunky peanut butter (not all-natural)
3 tablespoons packed dark brown sugar
1 1/2 cups (9 ounces) Milk chocolate and Peanut Butter Swirled morsels (I chopped/grated them up a bit.)
Graham cracker sticks and/or apple slices
BEAT cream cheese, powdered sugar, peanut butter and brown sugar in large mixer bowl until blended. Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly (should form a ball shape).FREEZE for 1 hour 30 minutes or until firm enough to keep its shape. Place morsels in flat dish. Remove plastic wrap from ball and roll ball into morsels to completely cover (you may find it necessary to press morsels into ball).PLACE ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.) Serve with graham cracker sticks and apple slices for dipping or spreading.
